ESSENTIAL FUNCTIONS



  1. Conducts nutritional assessments and individual resident referrals.
  2. Prepares and reviews dietary care plans for residents.
  3. Completes MDS form and charts special feedings, nutritional risks, and diet changes.
  4. Participates in resident care plan meetings as member of interdisciplinary team.
  5. Provides educational programs, training, and in-service education as assigned.
  6. Assists in development and planning menus including special diets Ensures modified diets are provided.
  7. Conducts quality assurance meal audits.
  8. Ensures proper implementation of resident diet changes.
  9. Assures accurate maintenance of computerized records regarding dietary information.
  10. Calculates and evaluates calorie counts.
  11. Trains new employees and coordinates cross-training opportunities. Coaches and mentors staff to meet goals and maintain motivation. Assists with scheduling as needed.
  12. Directs the work of and oversees assigned staff. Assist with interviewing and selection of new employees. Provides training and instructions and ongoing training needs. Assigns tasks, reviews work and prepares performance evaluations. Provides staff coaching/counseling. Provides assistance and answers questions, gives advice and recommendations to staff.
  13. Assists with the administration and oversight of all division services and operations under the direction of the division director.
  14. Assists in monitoring all dietary related operations to assure USDA regulations are followed.
  15. Assists with the implementation of policy and procedures for operational effectiveness, sustainability, customer service, collaboration, and safety.
  16. Responds to residents, families and the general public regarding complaints, questions, requests for information, problem resolution, and customer service.
  17. Other duties as assigned.


REQUIRED JOB COMPETENCIES



  • Knowledge of dietary service programs.
  • Knowledge of nutrition, food service, special diets, and medical problems requiring dietary assessments and intervention.
  • Ability to manage large food service department & knowledge of supervisory skills and practices.
  • Knowledge of electronic records systems.
  • Ability to instruct and train in methods and procedures.
  • Ability to organize, assign, and modify the work assignment of others, and (re)-establish priorities to meet deadlines.
  • Ability to establish and maintain accurate records of assigned activities and operations.
  • Ability to interpret and implement local policies and procedures; written instructions, general correspondence; Federal, State, and local regulations.
  • Skill in organizational and time management to prioritize duties to accomplish a high volume of work product while adapting to constant changes in priority.
  • Ability to perform detailed work accurately and independently in compliance with stringent time limits requiring minimal direction and supervision.
  • Ability to think quickly, maintain self-control, and adapt to stressful situations.
  • Knowledge of current office practices and procedures and knowledge of the operation of standard office equipment and software.
  • Knowledge of computer software including word processing, spreadsheet, and database applications consistent for this position.
  • Ability to perform mathematical calculations required of this position.
  • Ability to communicate clearly, concisely and effectively in English in both written and verbal form.
  • Skill in researching and understanding complex written materials.
  • Ability to prepare and maintain accurate and concise records and reports.
  • Ability to apply sound judgment and discretion in performing duties, resolving problems, and interpreting policies and regulations.
  • Ability to communicate detailed and often sensitive information effectively and concisely, both orally and in writing.
  • Ability to handle sensitive interpersonal situations calmly and tactfully.

PHYSICAL AND WORK ENVIRONMENT



  • This work requires the occasional exertion of up to 25 pounds of force; work regularly requires sitting, frequently requires standing, speaking or hearing, using hands to finger, handle or feel and repetitive motions and occasionally requires walking, stooping, kneeling, crouching or crawling and reaching with hands and arms.
  • Work has standard vision requirements.
  • Vocal communication is required for expressing or exchanging ideas by means of the spoken word.
  • Hearing is required to perceive information at normal spoken word levels.
  • Work requires preparing and analyzing written or computer data and observing general surroundings and activities.
  • Work frequently requires exposure to extreme cold (refrigerators/freezers) and exposure to extreme heat (stoves/ovens/fryers) and occasionally requires wet, humid conditions (non-weather), working near moving mechanical parts and exposure to chemicals.
  • Work is primarily in a health care setting where specialized resident programs are implemented. Work will also be in a kitchen preparatory setting and dining/serving setting.
  • Work environment includes exposure to infectious agents, chemical agents, and resident behaviors.

Qualifications
Education
Associates of Dietetics (required)
Experience
Associates' degree in Nutrition or Dietetics and two (2) years' experience in nutritional services. Equivalent combination of education and experience which provides necessary knowledge, skills, and abilities may be considered. (required)
Registered Dietetic. (required)
Must successfully pass caregiver and criminal background check. (required)
ServSafe certification required within one (1) year from date of hire. (required)
Lead or supervisory experience. (preferred)
Experience a in long term health care setting. (preferred)
Food Service management experience.
