LOCATION: Camp Ponderosa Ranch, Heber Arizona

STATUS: FT/30-40hrs/wk/Hourly

QUALIFICATIONS:



  • High School Diploma/GED required
  • Formal food service Training strongly preferred
  • Must have 4-6 years experience in food service production and management
  • Will exemplify a character rooted in respect, patience, & sensitivity towards a diverse population
  • Ability to lead staff and volunteers with a variety of skill levels and dispositions
  • Demonstratable meal planning and implementation for rental groups and summer camp
  • Must provide high-quality meals for large groups (serving up to 300 individuals per meal)
  • Ability to maintain a high level of cleanliness and safety and Llead others to do so as well
  • Ability to maintain a professional demeanor and tactful communication at all times
  • Ability to lead and work alongside teenagers and young adults seasonally
  • Must maintain Food Service Manager Certification once acquired
  • Must pass a criminal background check
  • Must have a valid AZ Driver's license with a clean driving record
  • Ability to work flexible hours Including nights and weekends


RESPONSIBILITIES:



  • Plan menus and order supplies/food alongside supervisor with a focus on high quality.
  • Maintain a reasonable budget and look for ways to reduce costs without sacrificing quality.
  • Take the position of lead cook while knowing when and how to delegate and ask for help.
  • Lead year-round and summer kitchen staff in function and demeanor, ensuring that respect is always maintained by staff.
  • Assist in scheduling kitchen staff, being the main proponent of the balance between workload and budgeted hours.
  • Order necessary quantities for 10 to 300 people, ensuring that there is always more than enough.
  • Prepare meals to a high taste quality, ensuring that Camp Ponderosa remains a leader in food service among Arizona camps.
  • Ensure proper seasoning, preparation, and safety of all food items.
  • Observe & test foods to determine if they are cooked sufficiently; using methods such as temping, tasting, smelling, etc.
  • Manage and store food at the proper temperature for preservation and distribution
  • Manage, store, and distribute leftovers properly and appropriately.
  • Ensure 'Front of the House' readiness before the meal and cleanliness following the meal.
  • Be responsible for all food, kitchen, and dining room safety and sanitary food-handling practices
  • Oversee and/or execute cleaning of kitchen area, equipment, & utensils thoroughly upon completion of prep & meal service
  • Maintain proper sanitation of food handling & preparation as required by Navajo County & State Health Departments
  • Other duties as assigned by the Camp Experience Manager or Camp Director as related to the position of Kitchen Manager.

The employee must regularly lift and/or move up to 20 pounds, frequently lift and/or move up to 50 pounds, and occasionally lift and/or move up to 75 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, depth perception and ability to adjust focus. Must have the ability to operate telephone, a desktop or laptop computer, as well as the ability to access and produce information from a computer, and to understand written information.
